
Ingredients:
- 185g butter (unsalted)
- 200g quality dark chocolate (70% cocoa)
- 275g caster sugar
- 3 large eggs
- 85g plain flour
- 40g cocoa powder
- 100g of your favourite chocolate
Method:
- Preheat the oven to 180°C.
- Weigh out 185g of butter and chop up 200g of quality dark chocolate.
- Place ingredients in a bowl over a saucepan of boiling water and heat until melted.
- While the chocolate mix cools, whisk together the eggs with the caster sugar until pale – it should double in size.
- Combine the chocolate mix with the eggs and sugar, using a metal spoon to stir in a figure-of-eight pattern.
- Sift in the flour and cocoa powder and combine.
- Chop up your chosen chocolate and stir into the mixture.
- Place in a greased baking tray and pop in the oven.
- Check the brownies after 20 minutes; when they are done, the mixture will still be a bit wet.
- Chop up and serve with strawberries and cream.
